Chilli Noodles With Tofu (Serves 4)
200 grams organic firm tofu, cut into bite size cubes
1 tablespoon nutritional yeast
1/2 tablespoon dried parsley
1/2 tablespoon tamari
1/2 tablespoon onion powder
1/2 tablespoon garlic powder
1/2 tablespoon chilli sauce
1/2 teaspoon cold-pressed extra-virgin olive oil
2 tablespoons of water
180 grams soba, cooked according to stir fry packet instructions
1 tablespoon tamari
1 tablespoon chilli sauce
1 tablespoon peanut butter
1 teaspoon maple syrup
4 tablespoons of water
1 teaspoon cold-pressed extra-virgin olive oil
1/4 red onion, sliced
1/2 capsicum, sliced
4 cup mushrooms halved
3/4 broccoli, cut into florets and quartered
3 spring onion leaves chopped
1/2 carrot, peeled and thinly sliced
12 sugar snaps, stringy parts removed
Mix A) and place on baking tray for 30 minutes @ 175 C.
Cook noodles according to stir fry packet instructions for B).
Blend ingredients for C) and set aside.
For D), heat oil and cook vegetables until onion is fragrant, broccoli is dark green, and mushrooms darken. Add noodles and blended sauce. Mix well. Add tofu and serve.
